PastaDC Pasta fresca is the fresh pasta line of PastaDC, an artisan pasta maker in Campofilone in the province of Fermo (Marche, Italy). The company stresses that it makes "only artisan fresh egg pasta", so the line is based on fresh egg pasta.
It includes chitarrine – thin square-section pasta close to spaghetti alla chitarra – tagliatelle, pasta sheets (sfoglia) for lasagne and other baked dishes, and gnocchetti made by hand. Fresh pasta cooks much faster than dried pasta, and the sheets can be used for home-made lasagne.
Tagliatelle and chitarrine are traditionally served with meat ragù such as bolognese or with mushroom and cream sauces. The fresh pasta is sold in the company's own shops in Porto San Giorgio.
