Rummo Nidi di Semola ('semolina nests') is Rummo's range of long dry pasta rolled into nests. The company calls them the traditional nest shapes of long pasta, made with patience and care.
Unlike the Pasta all'Uovo range, these nests are made from durum wheat semolina and water, without egg. Shapes such as tagliatelle and pappardelle are traditionally made with egg, so this version suits people who want familiar ribbons without eggs. The nest shape keeps thin long strands from breaking and makes portions easy to measure.
There are four shapes: very thin capelli d'angelo No. 106 ('angel hair'), tagliatelle No. 107, fettuccine No. 89 and wide pappardelle No. 119. Capelli d'angelo are traditionally cooked in broth or served with light sauces, while the wider ribbons go with ragù and cream sauces.
Like all the brand's durum wheat pasta, the nests are made in Benevento with the Lenta Lavorazione® method, with slow kneading and drying set for each shape.
