Capellini
One of the thinnest long dry pastas, sold wound into nests, made from durum wheat semolina and water; De Cecco gives a cooking time of 2 minutes.
Capellini (“fine hair”) are one of the thinnest types of long pasta and are sold wound into nests. They belong to dry durum wheat pasta, which in Italy is made only from durum wheat semolina and water (DPR 187/2001, art. 6).
According to De Cecco, the origin of capellini is contested between the area around Genoa, Naples and the Ciociaria in central Italy. Its Capellini n° 9 (500 g) have a cooking time of 2 minutes. De Cecco lists the related capelli d'angelo (“angel hair”) as n° 209, with the same origin statement and the same 2-minute cooking time.
De Cecco recommends simple condiments: uncooked butter and cheese, or melted butter with sage and cheese, plus egg-based or fresh raw tomato sauces. Capellini also go into a light chicken broth, and around Naples they are used in oven-baked dishes.
