Rummo Le Leggendarie
Rummo range of large traditional dry pasta shapes made from durum wheat semolina: paccheri, calamarata, orecchiette, zite.
Rummo Le Leggendarie ('the legendary ones') is the Rummo range devoted to the large shapes of Italian culinary tradition. The company says it has reinterpreted them 'with a pinch of creativity', so alongside classic paccheri the range includes variants of different sizes.
The pasta is made from durum wheat semolina and water with the Lenta Lavorazione® method used for all the brand's pasta: slow kneading, special dies for a rough surface and drying with a programme set for each shape.
There are 13 shapes: paccheri No. 111 and paccheri rigati No. 150, mezzi paccheri rigati, the brand's own paccherotti (smooth and ridged), calamarata No. 141 — wide rings that look like sliced squid — conchiglioni rigati, bombardini rigati, fusillotti, orecchiette No. 87, tripoline, mafaldine No. 80 and long zite No. 10, which in Campania are broken by hand before cooking.
Most of these shapes come from southern Italy. The large tubes and shells suit thick seafood or meat sauces and stuffing and baking, while orecchiette go well with vegetables.
