π Saperavi
Georgia's main red grape with coloured flesh; Mukuzani and Kindzmarauli are made from it.
Saperavi is Georgia's main red grape. The name means "dye". Not only the skin but also the flesh is coloured dark, which is rare among wine grapes. So Saperavi juice is red, and the wines come out very dark, almost inky.
Saperavi makes the Georgian wines Mukuzani and Kindzmarauli. The main area is Kakheti in the east of the country. The wines are rich, with high acidity and notes of dark berries, plum and spice. They age well. In Georgia, Saperavi is also made by the traditional method in clay vessels called qvevri. The wine is served with grilled meat, shashlik and Georgian dishes.
The grape also grows outside Georgia. It is grown in Moldova and in Ukraine: in Bessarabia (Budjak), in Bolhrad and Yalpuh, and also in Inkerman in Crimea. Saperavi was also used in breeding: the varieties Bastardo Magarachsky and Ruby Magarach come from it. It is one of the most recognisable grapes of the Caucasus.
