Also known as: cellentani, corkscrew pasta

Ridged dry pasta tubes twisted into a spiral (“corkscrews”), made from durum wheat semolina; De Cecco gives a cooking time of 8 minutes.

Cavatappi (“corkscrews”) belong, according to De Cecco, to the family of dried, whimsically shaped pasta: tubes that are curled or twisted like a corkscrew. They are made from durum wheat semolina and water (DPR 187/2001, art. 6).

The open ends and the distinctive ridges make them, in De Cecco's words, perfect with less dense, more liquid sauces, which are captured inside. The producer also names dense, colourful sauces of meat or fish, with leafy greens or vegetables, or with strong cheeses, as well as pasta salads.

De Cecco's Cavatappi n° 87 (500 g or 3 kg) have a cooking time of 8 minutes, with al dente at 6 minutes.
