Valfleuri Pâtes d'Alsace
Valfleuri's core line of dry egg pasta made from durum wheat semolina and seven fresh eggs per kilogram, produced in Alsace under the Pâtes d'Alsace IGP name.
Valfleuri Pâtes d'Alsace is the main line of the Valfleuri brand, the one that made the company known from the 1970s. It is dry Egg pasta to the Alsatian recipe: top-grade durum wheat semolina and fresh free-range eggs (30%, i.e. 320 g per kilogram of semolina — seven eggs). Both the durum wheat and the eggs are of French origin. The line's page carries the protected geographical indication logo, so this is Pâtes d'Alsace IGP.
The shapes cover both long and short pasta: thin and thick spaghetti, spaghettini, linguine, penne and mini penne, farfalle (papillons), macaroni, shells, serpentini, torsades, lasagnettes, fine angel hair similar to capellini, pepinettes for soups, nests from 2 to 15 mm wide, and spätzle. The farfalle are stamped from a sheet of dough, while spaghetti and linguine are dried hanging over rods.
Thanks to the high egg content the pasta has a creamy yellow colour and cooks quickly — penne, for example, take about 6 minutes. The line suits cream sauces, meat in sauce, gratins and side dishes in Alsatian cooking.
