Divella Pasta senza Glutine is Divella's range of gluten-free dry pasta. According to the official site, it is made from maize and rice flour, with no wheat. The company does not state the exact proportion of each flour.
Divella says the pasta was designed for people with coeliac disease or gluten intolerance who do not want to give up a good plate of pasta. Ordinary dry durum wheat pasta contains gluten, which is what holds the dough together; maize and rice have none, so this pasta has a different texture and a pale yellow colour from the maize.
The range has four shapes, each labelled 'Mais e Riso' — maize and rice: spaghetti, Penne Ziti Rigate, fusilli and tagliatelle. That covers long pasta for thinner sauces, short pasta for thicker sauces and bakes, and ribbons in place of egg pasta.
