Felicetti Original Egg is the egg pasta of Felicetti from the Fiemme Valley in Trentino. It is dry pasta made from Italian durum wheat semolina, eggs and water; according to the maker, eggs make up 19.36% of the recipe. The egg gives a more tender, golden dough than ordinary semolina pasta.
The range has eight items. Thin long shapes: tagliatelle, paglia e fieno (a mix of yellow and green ribbons), capelli d'angelo (close to capellini) and lasagne sheets. Small soup shapes: stellette, farfalline, filini and occhi di pernice.
Tagliatelle are traditionally served with bolognese, cream or mushroom sauces, the sheets are used for lasagne, and capelli d'angelo and the small shapes go into broth.
