Stelline
Also known as: little stars, star pasta, stelle
Tiny star-shaped pasta of the pastina family, cooked in broth and soups; the dry kind is made from durum wheat semolina.
Stelline ("little stars") are tiny star-shaped pasta of the pastina family, small pasta cooked in broth. Garofalo describes its Stelline n° 24 as a small star-shaped pasta with a hole in the middle, a classic pastina for broth, made from durum wheat semolina and bronze-drawn.
De Cecco sells the same format as Stellette n° 75 and says it belongs to the minute pasta family cooked in broth. It suits clear soups such as broth or consommé, with croutons or vegetables cut in julienne, and also thick creamy or velvety soups.
Under Italian law (DPR 187/2001, arts. 6 and 8), dry pasta is made from durum wheat semolina, and pasta sold as egg pasta contains at least four whole eggs, 200 g per kilogram of semolina.
Cooking time: Garofalo gives 5 minutes for Stelline n° 24, De Cecco 6 minutes for Stellette n° 75.
