De Cecco Pasta di semola

Pasta range ✔ Checked: 10.2026 · sources: 3 Updated:

De Cecco's core range: dry pasta of durum wheat semolina and water in dozens of long, short and soup shapes.

De Cecco Pasta di semola is De Cecco's core range, the one with which, the company says, its history began. It is dry durum wheat pasta: semolina and water.

The semolina is milled in the company's own mill next to the pasta factory in Fara San Martino, and only coarse-ground semolina is used, to preserve the gluten network. The dough is mixed with cold water from the Majella massif (below 15 °C), shaped through rough dies and dried slowly at low temperature: 9 hours for short pasta, 18 for long and up to 36 for long hollow shapes.

The range has dozens of numbered shapes: capellini No. 9, fedelini No. 10, spaghettini No. 11, spaghetti No. 12, linguine No. 7, bucatini No. 15, penne rigate No. 41, rigatoni No. 24, tortiglioni No. 23, ziti, trofie, farfalle and soup shapes. Spaghetti No. 12 cook in 12 minutes, or 10 for al dente.

The range covers almost all of classic Italian cooking, from spaghetti with seafood to baked ziti and pasta in broth.
