Garofalo Pasta Fresca Trafilata
Garofalo fresh pasta from durum wheat semolina drawn through bronze dies: scialatielli, paccheri, orecchiette, trofie and lasagne sheets.
Garofalo Pasta Fresca Trafilata is Garofalo's range of fresh pasta in regional shapes. The dough is based on durum wheat semolina. Like the company's dry pasta, it is drawn through bronze dies (trafilata means drawn), so the surface is rough and holds sauce well.
The range has nine shapes: calamarata (large rings), chitarrine, fusilli alla napoletana, maccheroni, orecchiette, paccheri, scialatielli, trofie and fresh lasagne sheets. Most are traditional shapes of southern Italy: scialatielli and paccheri from Campania, orecchiette from Apulia and trofie from Liguria.
Garofalo suggests scialatielli above all with fish and seafood sauces. Fresh pasta cooks faster than dry pasta and is kept in the refrigerator.
The range is meant for traditional regional dishes and baked lasagne.
