Also known as: ditali, tubetti, ditalini rigati

Tiny dry pasta tubes (“thimbles”) made from durum wheat semolina, smooth or ridged, used mainly in soups.

Ditalini (“small thimbles”) are tiny dry pasta tubes made from durum wheat semolina and water (DPR 187/2001, art. 6). De Cecco lists them as a smaller variation of the classic ditali and as part of the minute pasta (pasta minuta) family from Campania. The shape is inspired by the sewing thimble, but is open at the top as well.

According to De Cecco they are mainly used for vegetable soups with light, tasty broths, enhanced with croutons or vegetables cut into julienne strips; they can also be used in thick creamy or velvety soups.

De Cecco offers smooth Ditali Piccoli Lisci n° 68 (cooking time 11 minutes) and ridged Ditali Piccoli Rigati n° 69 (cooking time 7 minutes), both in 500 g packs.
