Barilla Emiliane
Barilla egg pasta range made from durum wheat semolina and fresh eggs: ribbons, lasagne, soup pasta and filled pasta.
Barilla Emiliane is Barilla's egg pasta range, named after the company's home region of Emilia. According to the official website it is made from durum wheat semolina and category A fresh eggs. Barilla states that all the eggs for the range come from barn-raised hens. The percentage of egg is not given on the range page.
The dough is rolled into a thin sheet with a rough, porous surface; for lasagne Barilla makes both thin and thick sheets, as well as green ones with spinach. The range has 23 products: tagliatelle, fettuccine, pappardelle, taglierini, paglia e fieno (yellow and green ribbons), garganelli, cannelloni and lasagne, plus the soup shapes filini, stelline, quadretti and grattini. There is also filled pasta: tortellini with prosciutto crudo, tortelloni with ricotta and spinach, and cappelletti with meat.
Egg pasta cooks faster than dry durum wheat pasta: tagliatelle take 6–7 minutes, tortellini 10 minutes. 100 g of dry tagliatelle contain 15 g of protein.
The range is aimed at Sunday and festive dishes: tagliatelle with ragù, baked lasagne, tortellini in broth.
