Benedetto Cavalieri Pasta di Semola di Grano Duro
Benedetto Cavalieri's main range: about forty shapes of dry pasta from Italian durum wheat semolina.
Benedetto Cavalieri Pasta di Semola di Grano Duro is the main range of the Benedetto Cavalieri factory in Maglie, Apulia. It is dry durum wheat pasta made from a blend of Italian durum wheat semolinas and water; each shape gets its own semolina blend.
It is made by the "Metodo Delicato": the dough is kneaded for a long time with cold water (no more than 35 °C), pressed slowly and extruded through bronze dies with a funnel-shaped chamber for each hole. Long pasta is hung on canes, short pasta is cut by knives at the die, and both are dried slowly with air at no more than 54 °C for 20 to 40 hours; the pasta then rests before packing.
The range has about forty shapes. Long ones include capellini, spaghettini, spaghetti, spaghettoni, linguine, bucatini, tagliatelle and lasagnotte. Short ones include smooth and ridged penne, rigatoni, mezzi rigatoni, casarecce, fusilli, paccheri, calamarata, orecchiette, farfalle, mezze maniche and "ruote pazze". Small soup shapes include stelline, risoni (orzo) and tubettini.
It is pasta for everyday cooking and for restaurant kitchens: spaghettoni for carbonara or aglio e olio, orecchiette for Apulian vegetable dishes.
