Recheis Glutenfrei is Recheis's gluten-free pasta line. According to the official site it is 100% wheat-free, made from selected corn and rice varieties: the penne contain corn flour (94.9%), rice flour (4.8%) and an emulsifier (mono- and diglycerides of fatty acids). The pasta is certified gluten-free by the Austrian coeliac society (Österreichische Arbeitsgemeinschaft Zöliakie) and certified vegan.
The line has six shapes in traditional Austrian style: Fleckerl, spaghetti, penne, Dralli (spirals), Fadennudeln (fine soup noodles) and Hörnchen. The penne cook in about 11 minutes, longer than wheat pasta.
The range is meant for people with coeliac disease or those who avoid gluten. The maker says the pasta looks like classic pasta and keeps a good bite; corn pasta overcooks more easily, so it is worth sticking to the time on the pack.
