Rummo Le Classiche
Rummo's core range of dry pasta made from durum wheat semolina and water: over 40 long, short and soup shapes.
Rummo Le Classiche is Rummo's core range of dry pasta, which the company describes as the classic and essential shapes of Italian cooking. The pasta is made from durum wheat semolina and water in Benevento using the company's Lenta Lavorazione® method: slow kneading, extrusion through special dies that give a rough surface, and drying with a programme set for each shape.
The range has more than 40 shapes, each with its own number. Long shapes include capellini No. 1, spaghettini No. 2, spaghetti No. 3, bucatini No. 6, linguine No. 13, fettucce No. 15 and spaghetti alla chitarra No. 104. Short shapes include penne rigate and penne lisce, rigatoni No. 50, fusilli No. 48, farfalle No. 85, casarecce No. 88, conchiglie rigate, gnocchetti sardi and the brand's own mafaldotte. There are also small soup shapes such as stelline, tubetti and semi di orzo.
For spaghetti No. 3 the official site gives a diameter of 1.9 mm, a length of 260 mm and a cooking time of 9 minutes. The range is meant for everyday dishes, from tomato sauce and seafood to simple garlic, oil and chilli.
