Un ex-bourbon barrel è una botte di rovere in cui un tempo maturava il bourbon americano e che ora contiene un altro distillato forte: scotch o whiskey irlandese, oppure rum. Di solito è una botte americana standard di rovere bianco da 180–200 litri, cioè 50–53 galloni statunitensi. Secondo il Difford's Guide, è il tipo di botte più diffuso al mondo.
Perché ce ne sono tante. Secondo le norme USA, il bourbon e lo straight bourbon whiskey possono maturare solo in botti nuove di rovere carbonizzato. Perciò, dopo il primo uso, le botti vengono rivendute, soprattutto a distillerie scozzesi e produttori di rum. Il whiskey di mais, invece, può essere conservato in botti usate o non carbonizzate.
Rimontaggio. Per ridurre i costi di trasporto, le botti vengono spesso smontate in doghe e rimontate sul posto: con cinque botti standard e fondi nuovi si ottengono quattro hogshead da 250 litri. Una botte più grande permette di stoccare più whisky sulla stessa superficie di magazzino.
Le regole dello scotch. Lo scotch whisky deve maturare almeno tre anni in botti di rovere fino a 700 litri, e la legge non impone che siano nuove. Per questo le botti usate, di bourbon, sherry o vino, sono il contenitore principale dello scotch; una dicitura come «Bourbon Cask» in etichetta indica dove il whisky ha maturato.
Perché conta per lei. La menzione di una botte ex-bourbon indica lo stile: il whisky di questo tipo di botte è di solito più chiaro e con note di vaniglia e di legno, a differenza di quello maturato in botte di sherry. Il tipo di botte non cambia la gradazione della bevanda. L'OMS ricorda che non esiste un livello sicuro di consumo di alcol.
